I was hosting a brunch, and I had lots of frozen raspberries.  I found this recipe for Vegan Cornmeal Raspberry Muffins on one of my favorite blog sites, Eggless Cooking.  I changed it a bit — I used all regular flour and skipped the cornmeal, because I didn’t have any cornmeal, and I used soymilk instead of almond milk to keep these treats nut-free.  They were divine!  Very difficult to eat just one…Yum!
