Vegan Apple Layer Cake

One of my children prefers fruity desserts to chocolatey ones. When I asked him what he wanted for his birthday cake, he expressed that fruity preference. After spending some time looking for recipes, I came across this one on My Quiet Kitchen for an apple layer cake. Wow! With a few modifications, this has become one of our favorite go-to recipes. It was so delicious that my other son requested it for his birthday cake, too! I feel obliged to add a warning to this recipe though…the cake is a mouth-watering dense and moist one, so make sure that you invite guests to share it so that you don’t eat too much of it! Also, I baked it as two cakes instead of three, and I cut back a bit on the frosting. I did not add bourbon or corn starch to the filling, and I also cooked the filling a bit longer so that it was more like an apple jam. I skipped the apple and nuts for decorations as well, and used some vegan sprinkles instead. It was a crowd-pleaser! Enjoy!
