October always makes me crave pumpkin…and the grocery stores are stocked with lots of canned pumpkin.  I like TJ’s organic canned pumpkin.  So what to do with all of this pumpkin?  How about pumpkin bread?  I found this wonderful Pumpkin Bread Recipe.  I made it with soy milk, canola oil, and raisins instead of cranberries.  Within 24 hours, it was gone…before I could snap a photo and post it here!  Yummy!  And now I may need to make another one, because I wouldn’t want the other half of the canned pumpkin that I didn’t use to go to waste now, would I?  And I need to get that picture, right?  Enjoy!
