To celebrate the Jewish New Year, I wanted to make a vegan honey cake.  That’s an oxymoron right, because honey is not vegan.  So I wanted to make a honey cake that has real honey, but that skips the egg and the dairy.  Here’s what I found.  I skipped the walnuts and used unsweetened plain soy milk for the milk.  I have made it twice so far, and it has been a big hit!  It is not exactly low in sugar, but for a once (or twice) a year treat, it yields a crowd pleasing cake with a perfect texture to ring in the New Year!  Enjoy!
