I was looking for another recipe to utilize the numerous zucchinis that I had purchased at the local Farmer’s market.  I found this fritter recipe, which I modified as follows:  I shredded the carrots as well as the zucchini using a Cuisinart, I skipped the chili/cayenne, I used coriander powder and cumin powder instead of seeds, I used already ground black pepper, and I used applesauce instead of flax or chia seeds.  I couldn’t stop eating these savory bites.  They tasted especially delicious with a dollop of applesauce on top.  My son who is adventurous tolerated these, and my unadventurous eater did not.  So this might be more pleasing to grown-ups than kids, depending on their tolerance for spice.  Enjoy!
