Try this vegan recipe from About Food if you want to eat pancakes as a side dish.  It is so simple, and you will not need to buy any special ingredients to make them.  I like adding a few dashes of cinnamon to enhance the flavor of the batter, and I always add about 1/4 to a 1/2 of a small bag of frozen blueberries to the mix.  Then, I add additional ingredients, such as vegan chocolate chips, and/or slices of overripe bananas, depending on who is enjoying the pancakes with us on any given day.  Top them off with real Vermont Maple Syrup, and these will give any non-vegan pancake recipe a run for their money!  For a larger batch, see my other blog post on Simple Vegan Pancakes.
